Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 2 bay leaves
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery, sautéing until softened.
  3. Stir in the garlic, cumin, and smoked paprika, cooking for another minute.
  4. Add the lentils, broth, and bay leaves; bring to a boil.
  5. Reduce heat, cover, and simmer for about 30 minutes, or until lentils are tender.
  6. Remove the bay leaves, stir in the lemon juice, and season with salt and pepper to taste.
