Zucchini & Herbed Ricotta Flatbread

A delicious and easy-to-make flatbread topped with fresh zucchini and herbed ricotta.

Ingredients

  • 2 medium zucchinis, thinly sliced
  • 1 cup ricotta cheese
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 package of flatbread

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine the ricotta cheese, basil, oregano, salt, and pepper.
  3. Spread the ricotta mixture evenly over the flatbread.
  4. Arrange the sliced zucchini on top of the ricotta.
  5. Drizzle olive oil over the top.
  6. Bake for 15-20 minutes until the zucchini is tender.
  7. Slice and serve warm.

Notes

  • For extra flavor, add some grated Parmesan on top before baking.
  • Feel free to experiment with other vegetables like bell peppers or cherry tomatoes.
