Instructions

  1. Grate the zucchini and sweet potato, then squeeze out excess moisture.
  2. In a bowl, mix the grated vegetables with eggs, flour, salt, pepper, and cheese.
  3. Heat oil in a skillet over medium heat.
  4. Drop spoonfuls of the mixture into the skillet and flatten slightly.
  5. Cook for about 3-4 minutes on each side until golden brown and crispy.
  6. Transfer fritters to a paper towel-lined plate to drain excess oil.
