Air Fryer Shrimp and Vegetables

A quick and easy weeknight dish that combines succulent shrimp with a medley of colorful vegetables, all cooked to perfection in an air fryer.

  • 1 pound large shrimp, peeled and deveined
  • 2 cups mixed bell peppers, sliced
  • 1 cup zucchini, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a large bowl, combine the shrimp and vegetables.
  3. Drizzle with olive oil and sprinkle with garlic powder, paprika, salt, and pepper. Toss to coat evenly.
  4. Add the mixture to the air fryer basket in a single layer.
  5. Cook for 8-10 minutes, shaking the basket halfway through cooking.
  6. Once cooked, remove from the air fryer and serve immediately.

Notes
