- 2 pounds beef chuck, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 cups potatoes, diced
- 3 cups carrots, sliced
- 1 teaspoon dried thyme
- 2 bay leaves
- 1 tablespoon Worcestershire sauce
- Salt to taste
- Black pepper to taste
- In a large pot, heat olive oil over medium heat. Add the beef and brown on all sides.
- Add onion and garlic, sauté until softened.
- Pour in beef broth and bring to a boil.
- Add potatoes, carrots, thyme, bay leaves, and Worcestershire sauce. Stir well.
- Reduce heat, cover, and simmer for 1.5 to 2 hours, until beef is tender.
