  • 4 cups chicken broth
  • 2 chicken breasts
  • 2 servings of ramen noodles
  • 1 cup sliced mushrooms
  • 1 cup baby spinach
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 eggs

Instructions

  1. In a large pot, heat sesame oil over medium heat and sauté garlic until fragrant.
  2. Add the chicken breasts and cook until no longer pink, then remove and shred the chicken.
  3. Pour in the chicken broth and bring to a simmer.
  4. Add the mushrooms and cook for about 5 minutes.
  5. Add the ramen noodles and cook according to package instructions.
  6. Stir in the shredded chicken, spinach, and soy sauce.
  7. In a separate pot, boil water and gently add eggs for a soft boil. Cook for 6-7 minutes and then transfer to cold water, peel and slice in half.
  8. Serve ramen in bowls topped with green onions and a halved egg.

Notes

  • For a spicier kick, add Sriracha or chili oil.
  • You can also add more vegetables like bok choy or carrots.
