Breakfast Veggie Crinkle Cake

  • 1 cup grated zucchini
  • 1 cup grated carrots
  • 1/2 cup sugar
  • 1/2 cup vegetable oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the eggs, vegetable oil, and vanilla.
  4. Stir in the grated zucchini and carrots into the wet mixture.
  5. Combine the wet and dry ingredients until just mixed.
  6. Pour the batter into a greased baking dish.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
