- 1 cup fresh cherries, pitted and halved
- 2 cups mascarpone cheese
- 1 cup heavy cream
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 1 cup brewed coffee, cooled
- 2 tablespoons cherry liqueur (optional)
- 1 package ladyfinger cookies
- 2 tablespoons cocoa powder, for dusting
- In a medium bowl, whip the heavy cream until stiff peaks form. In another bowl, mix the mascarpone cheese, sugar, and vanilla until smooth.
- Gently fold the whipped cream into the mascarpone mixture.
- In a shallow dish, combine the brewed coffee and cherry liqueur. Quickly dip each ladyfinger into the mixture, then layer them in a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers, then layer half of the cherries on top.
- Add another layer of dipped ladyfingers, followed by the remaining mascarpone mixture and cherries.
- Cover and refrigerate for at least 4 hours or overnight. Dust with cocoa powder before serving.
