Cornish Hens with Apple-Cranberry Rice Stuffing

  • 2 Cornish hens
  • 1 cup rice
  • 1 apple, chopped
  • 1/2 cup dried cranberries
  • 1/4 cup onion, chopped
  • 1/4 cup celery, chopped
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, cook rice according to package instructions.
  3. In a skillet, melt butter and sauté onion and celery until soft.
  4. Stir in chopped apple, cranberries, salt, pepper, thyme, and cinnamon.
  5. Combine the cooked rice with the apple-cranberry mixture.
  6. Stuff each Cornish hen with the rice mixture.
  7. Place hens in a roasting pan and bake for about 1 hour, or until cooked through.
  8. Let rest before serving.

Notes

  • For extra flavor, brine the hens for a few hours before cooking.
