Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the Cornish hens and pat dry.
  3. In a saucepan, melt butter and sauté onions until translucent.
  4. Add rice, chicken broth, apple, cranberries, thyme, salt, and pepper; bring to a boil.
  5. Cover and simmer for 20 minutes.
  6. Stuff the mixture into the Cornish hens.
  7. Place the hens in a roasting pan and roast for 1 hour or until the internal temperature reaches 165°F (74°C).
