Creamy Tomato Bisque with Grilled Cheese Croutons

  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon dried basil
  • 1 teaspoon sugar
  • Salt to taste
  • Pepper to taste
  • 4 slices bread
  • 4 slices cheddar cheese

Instructions

  1. Heat olive oil in a large pot. Add onions and garlic; sauté until onions are translucent.
  2. Add tomatoes, broth, basil, and sugar; simmer for 20 minutes.
  3. Blend soup until smooth, then stir in heavy cream. Season with salt and pepper.
  4. For croutons, grill cheese between bread slices until golden brown, then cut into small squares.
  5. Serve soup topped with grilled cheese croutons.
