Crockpot Pot Roast with Gravy

  • 3 pounds chuck roast
  • 1 tablespoon olive oil
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 4 medium carrots, chopped
  • 4 medium potatoes, chopped
  • 1 onion, quartered
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium-high heat.
  2. Season the chuck roast with salt and pepper, then sear on all sides until browned.
  3. Transfer the roast to the crockpot and add the beef broth, Worcestershire sauce, garlic powder, onion powder, and thyme.
  4. Add the carrots, potatoes, and onion to the crockpot.
  5. Cover and cook on low for 8 hours or until the meat is tender.
  6. Once done, remove the roast and vegetables, and let the roast rest before slicing.
  7. For gravy, strain the cooking liquid and thicken if desired.

Notes

  • For extra flavor, add mushrooms to the roast.
  • Serve with fresh bread for a complete meal.
