Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. In a saucepan, combine water and butter, bringing to a boil.
  2. Stir in flour until the mixture forms a ball and pulls away from the sides of the pan.
  3. Remove from heat and let cool slightly, then beat in eggs one at a time until smooth.
  4. Drop spoonfuls onto a baking sheet and bake until golden and puffed.
  5. Allow to cool, then whip cream and fold in lemon juice and zest.
  6. Fill pastries with lemon cream and enjoy!
