Ingredients

  • 2 ripe peaches
  • 4 cups arugula
  • 1/2 cup fresh basil leaves
  • 1/3 cup goat cheese, crumbled
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and slice the peaches into wedges.
  2. In a large bowl, combine the arugula and basil.
  3. Add the sliced peaches and crumbled goat cheese on top.
  4. In a small bowl, whisk together the balsamic vinegar and olive oil, and season with salt and pepper.
