1 cup pumpkin puree
3/4 cup sugar
1 can (14 oz) sweetened condensed milk
1 can (12 oz) evaporated milk
3 large eggs
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Instructions
Preheat the oven to 350°F (175°C).
In a saucepan over medium heat, melt 1/2 cup of sugar until golden brown, then pour into a round flan mold.
In a blender, combine pumpkin puree, remaining sugar, sweetened condensed milk, evaporated milk, eggs, vanilla, cinnamon, and nutmeg. Blend until smooth.
Pour the mixture into the flan mold over the caramel.
Place the flan mold in a larger baking dish and fill it with water halfway up the sides of the mold.
Bake for 50-60 minutes or until set. Let cool before refrigerating.
To serve, run a knife around the edges of the flan and invert onto a serving plate.
Notes
For an extra touch, top with whipped cream and a sprinkle of cinnamon.
Ensure the caramel is not too dark to avoid a bitter taste.
