Ingredients

  • 2 medium zucchinis
  • 1 medium eggplant
  • 1 bell pepper
  • 1 onion
  • 4 cloves garlic
  • 4 strips turkey bacon
  • 1 can diced tomatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Dice the zucchinis, eggplant, bell pepper, and onion.
  3. In a skillet, cook the turkey bacon until crispy, then remove and chop it.
  4. In the same skillet, add olive oil and sauté the onion and garlic until fragrant.
  5. Add the diced vegetables and sauté for about 5 minutes.
  6. Stir in the diced tomatoes, turkey bacon, thyme, basil, salt, and pepper.
  7. Transfer the mixture to a baking dish and bake for 30 minutes.
  8. Serve warm as a delicious side or main dish.

Notes

  • For an extra layer of flavor, add some grated Parmesan cheese before serving.
