Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat.
  3. Season the brisket with salt and pepper, then sear it until browned on both sides.
  4. Remove brisket, add onions and garlic, sauté until softened.
  5. Stir in tomato paste, thyme, and red wine; bring to a simmer.
  6. Add beef broth, then return brisket to pot, cover, and transfer to the oven.
  7. Braise for 3 hours until tender, flipping halfway through.
  8. Remove from oven, let rest for 10 minutes, then slice and serve.
