  • 1 can (400ml) coconut milk
  • salt to taste
  • 1 tablespoon fresh coriander, chopped (for garnish)

Instructions

  1. Boil the eggs in water for about 10 minutes, then cool them in cold water and peel.
  2. Heat the vegetable oil in a pan over medium heat.
  3. Add the chopped onion and sauté until golden brown.
  4. Stir in the garlic, ginger, and green chilies, cooking for an additional minute.
  5. Add the curry powder and turmeric, stirring well.
  6. Pour in the coconut milk and stir until combined.
  7. Simmer the sauce for about 5 minutes.
  8. Add the peeled eggs gently into the sauce, cooking for another 5 minutes so they absorb the flavors.
  9. Season with salt to taste.
  10. Garnish with freshly chopped coriander before serving.
