  • 1 cup fresh cranberries
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and thinly slice the sweet potatoes.
  3. In a greased baking dish, layer half of the sweet potatoes, followed by half of the cranberries.
  4. Pour half of the heavy cream over the first layer.
  5. Repeat the layers with the remaining ingredients.
  6. Top with Parmesan cheese and breadcrumbs.
  7. Dot the top with butter.
  8. Bake for 45-50 minutes until golden brown and bubbly.
  9. Let cool slightly before serving.
