  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 1 can (14 oz) coconut milk
  • 4 cups vegetable broth
  • 1 cup bell peppers, sliced
  • 1 cup mushrooms, sliced
  • 1 cup spinach
  • 2 tablespoons lime juice
  • salt to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and sauté until translucent.
  3. Stir in garlic and ginger, cooking for 1 minute.
  4. Add red curry paste and cook for another 2 minutes.
  5. Pour in coconut milk and vegetable broth, bring to a simmer.
  6. Add bell peppers and mushrooms, simmer for 10 minutes.
  7. Stir in spinach and lime juice, cook for an additional 2 minutes.
  8. Season with salt to taste and serve hot.
