- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup brewed espresso, cooled
- 1 cup mascarpone cheese
- 1/2 cup heavy cream
- 2 tablespoons powdered sugar
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, sift together the flour, cocoa powder, and baking powder. Gradually incorporate this dry mixture into the butter mixture.
- Slowly add the cooled espresso and mix until the batter is smooth.
- Fill each cupcake liner about 2/3 full with batter and bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow the cupcakes to cool completely.
- Meanwhile, in a bowl, whip the heavy cream with powdered sugar until soft peaks form. Fold in the mascarpone cheese gently.
- Once the cupcakes are cool, top them generously with the mascarpone frosting.
