  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, softened

  • 1 teaspoon vanilla extract
  • 1/2 cup brewed espresso, cooled
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, sift together the flour, cocoa powder, and baking powder. Gradually incorporate this dry mixture into the butter mixture.
  5. Slowly add the cooled espresso and mix until the batter is smooth.
  6. Fill each cupcake liner about 2/3 full with batter and bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Allow the cupcakes to cool completely.
  8. Meanwhile, in a bowl, whip the heavy cream with powdered sugar until soft peaks form. Fold in the mascarpone cheese gently.
  9. Once the cupcakes are cool, top them generously with the mascarpone frosting.

Notes

  • For an extra coffee kick, drizzle some espresso over the cooled cupcakes before frosting.
