Twice-Baked Potatoes with Broccoli and Cheddar (Family Approved)

A delicious and comforting recipe for Twice-Baked Potatoes filled with healthy broccoli and cheesy cheddar.

Ingredients

  • 4 large russet potatoes
  • 2 cups chopped broccoli
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Bake the potatoes for about 45 minutes or until tender.
  3. While the potatoes are baking, steam the broccoli until bright green and tender.
  4. Once the potatoes are done, let them cool for a few minutes, then cut them in half lengthwise and scoop out the insides.
  5. In a mixing bowl, combine the potato insides, steamed broccoli, cheddar cheese, sour cream, milk, butter, garlic powder, salt, and pepper. Mix well.
  6. Fill the potato skins with the broccoli-cheese mixture.
  7. Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes.
  8. Serve hot and enjoy!

Notes

  • For added flavor, consider topping with additional cheese before the second bake.
