  • 2 large zucchinis
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. Lightly salt the zucchini slices and let them sit for 10 minutes to draw out moisture.
  4. In a bowl, mix together the ricotta, mozzarella, Parmesan, egg, garlic, Italian seasoning, salt, and pepper.
  5. Pat the zucchini strips dry with paper towels.
  6. Spread a layer of marinara sauce on the bottom of a baking dish.
  7. Place a spoonful of the ricotta mixture on each zucchini strip and roll them up.
  8. Arrange the zucchini rolls in the baking dish seam-side down, and cover with remaining marinara sauce.
  9. Bake in the preheated oven for 25-30 minutes until bubbly and golden.
